It’s back! Our ’06 Full Fare Shiraz was a beautiful wine and so popular that when the opportunity arose, we grabbed the ’07 with both hands and held on tight! We hoped that this next vintage would match up, and the good news is that it is even better than its predecessor. It is a huge, inky wine, ruby-red, gleaming bright coral at the edges. The nose is intriguing and constantly evolving, showing spiced plum jam, milk chocolate and ripe blackberries. It opens up magnificently with some time in the glass. The palate is rich and complex with lots of very fine, powdery tannins, a lovely hint of mixed peel and nutmeggy Christmas pudding spices. Perfectly ripe fruit, good-quality oak and those smooth blackberry and chocolate flavours contribute to a long, satisfying finish.
